2 Week Meal Plan 5/24 – 6/6
I had stopped doing our 2 week Meal Plan posts when my health was so bad. I’m ready to start it again! It feels like progress, so that makes me happy. 😊
This rotation started on Sunday, so I’m going to post it that way anyhow & will try to get back into the habit of starting to post on Saturdays before the meal plan starts.
Sun 5/24 – Roast in IP (instant pot) with potatoes & carrots
M 5/25 – Stuffed peppers with rice, sausage & cheese (post coming tomorrow about this!)
Tu 5/26 – Bacon, eggs & hashbrowns (We try to do one big egg meal a week since we get eggs from our chickens. The kids also sometimes cook themselves eggs for breakfast or lunch.)
W 5/27 – Burritos (we’ve been trying to do this meal about once a week also – it’s inexpensive, everyone likes it & it also uses eggs, which we have in abundance)
Th 5/28 – Stir fry veggies with chicken over rice (I have diced leftover chicken in the freezer)
F 5/29 – Chicken Nuggets & French Fries (needed an easy meal for the kids to do)
Sat 5/30 – Kiev, rice & asparagus
Sun 5/31 – Brats & Chips
M 6/1 – 15-Bean soup
Tu 6/2 – French Toast & Sausage
W 6/3 – Burritos
Th 6/4 – Tetrazzini (diced leftover chicken in freezer) & asparagus
F 6/5 – Italian Sausage & Peppers/Onions
Sat 6/6 – Chili
Unfortunately this meal plan isn’t necessarily the same for Lexa & I since we have different allergies. If we can eat the same meat, we do. I have a completely different meal plan for Lexa & I just do my best to eat what I can.
