2 week menu plan Sept 29 – Oct 12

For many years I have done weekly menu plans – based on our schedule that week, what we have on hand that needs eaten, etc.

We are trying something new & going to do 2-week menu plans – with the goal of eventually being able to simplify grocery shopping, menu planning (ex: create several rotating 2-week menu plans), prevent food waste, etc. I’m planning to post them here for 2 reasons – to help keep me accountable and to hopefully help inspire others who are also struggling! 🙂

Sunday 9/29 – Fried chicken

Monday 9/30 – Tuna casserole (Lexa)

Tuesday 10/1 – Pork chops w/ oven fried potatoes (Lexa)

Wednesday 10/2 – Homemade pizza (Lizzy)

Thursday 10/3 – Chili (Lizzy)

Friday 10/4 – Bacon, eggs & hashbrowns (Keira)

Saturday 10/5 – Baked potato bar (w/ leftover chili) (Keira & Logan)

Sunday 10/6 – Italian Beef

Monday 10/7 – Kiev & rice (Lexa)

Tuesday 10/8 – Pumpkin soup (Lexa)

Wednesday 10/9 – Hamburger Casserole (Lizzy) (this is a recipe we got from a dear friend Levon Kline who brought us a meal after a baby was born, probably 2007 or 2009.)

Thursday 10/10 – Egg & Sausage Burritos (Lizzy)

Friday 10/11 – Mac & cheese (Keira)

Saturday 10/12 – Toasted ham & cheese (Keira & Logan)

The child’s name on the list is who is assigned to make or help make the meal. We are trying something new this year – having each child have assigned days, instead of just helping whenever I happened to ask. And trying to build up their repertoires so each child knows a great variety of meals. They got to help pick out some of the meals they will be cooking.

While I would love to eat healthy all the time & make 100% of our food from scratch, that doesn’t always happen, & I’m trying to be ok with that. 🙂

    • Of course! I will post them Thursday (Xanna has a fun post scheduled for tomorrow). Embarrassingly, the Kiev is just frozen convenience food, but our family loves it! It’s only about $1 for a chicken breast entree, so for convenience food, not too bad & relatively healthy. Then we do a chicken flavored rice as a side & maybe a salad
