GF DF Pie Crust Recipe by Lizzy
This recipe makes 2 pie crusts
INGREDIENTS:
*1/2 C shortening, lard, or dairy free butter (any combination, we like to do 1/4 C each of shortening & lard)
*3 Tbsp ice cold water
*1 1/4 C gluten free flour with xanthan gum (if you use a different GF flour that doesn’t contain xanthan gum, add 1/4 tsp of the xanthan gum)
*2 Tbsp granulated sugar
*1/4 tsp salt
*1 large egg
*1/4 tsp apple cider vinegar
INSTRUCTIONS:
1. Put your lard/shortening & water in separate bowls & put the bowls in the freezer for about 5 minutes.
2. Mix the remaining ingredients (I use a food processor, but you don’t want to overwork the dough!) Mix just until combined.
3. Add the water & lard/shortening from the freezer & cut them into the other ingredients until a stiff dough forms.
4. Shape dough into 2 balls. Wrap in plastic wrap & refrigerate at least 1 hour.
5. Let pie dough stand at room temperature for 15 minutes, then roll out & bake as directed for your “recipie.” 😊😉
