Beef Stew Instant Pot Recipe (GF, DF)

We recently tweaked an old Beef Stew recipe & have really been enjoying it…it’s fast & easy & delicious! It is not heavy on tomatoes as that’s our family’s preference, you could easily add a can of diced tomatoes.

INGREDIENTS:

*2 lbs Stew meat, tossed in worsteshire (to marinade the meat & tenderize) & cornstarch

*1 onion, diced & sauteed in oil til soft (I do this in the instant pot before adding everything else)

*2 tsp minced garlic

*4-6 carrots, cut into coins

*8-10 potatoes, cut up into bite sized pieces

*2-4 Cups of beef broth

*1 can (6 oz) tomato paste

*2 tsp salt

*optional: add water to make it the consistency you want it

INSTRUCTIONS:

Saute the onions in a bit of oil until soft, then throw everything else into the pot, set on high pressure for 30 minutes, then natural release for 15 minutes. Stir & serve! We like it over egg noodles, although not an option currently since we’re GF. 😊

*NOTE: You can also make this in a slow cooker or stovetop, it will take a bit longer, but still a quick & easy meal.*
