Pulled Pork Recipe…GF, DF, Large Crowd Friendly

We have never made pulled pork before, but we always enjoy it, so we decided to make a huge batch of it for our last potluck.

I loosely followed this recipe: Easy BBQ Pulled Pork (GF, DF) & then multiplied by 7 😊 (I did have to do some conversions as she uses Celcius instead of Fahrenheit & grams instead of Cups in her recipe.)

We first mixed up a huge batch of the spice rub (this wasn’t all of it)
Then I cut the pork into fist sized pieces
Keira rubbed the spice rub into each piece
The spice rubbed meat
I then seared each piece of pork on all sides
We put all the seared pieces of meat into our huge electric roaster, poured the apple cider vinegar in it & cooked it around 400°F for about 6 hours (we have realized that this huge roaster doesn’t actually cook at the temperature it was set at, which is why I turned it up, it would need less time & a lower temperature in the oven)

As a note…it was time consuming to cut, rub & sear so many individual pieces of meat. I don’t think this was a necessary step, but I did feel that it would impart more flavor & keep the meat more moist. I definitely at least recommend searing the meat as that seals in juices.

Stir at least once an hour, to ensure all the meat gets some time in the vinegar & as it cooks, the meat juices also make a yummy sauce.

Spice rub for ~30 lbs of meat:

*7 Tbsp paprika or smoked paprika

*7 Tbsp cumin

*7 Tbsp brown sugar

*1/4 Cup garlic powder

*1/4 Cup onion powder

*1-2 Tbsp black pepper

*1/4 Cup salt

*1/4 Cup dried oregano

Pour 2 1/8 – 3 Cups of apple cider vinegar into the bottom of the pan. (I used more than it called for since it was a huge roasting pan.)

Cook at 300° F for at least 4 hours, until the meat easily shreds, stirring once in a while.

When the meat shreds easily, shred it with 2 forks & add BBQ sauce if you want. For our potluck, I put out 2 pots of the meat – 1 with BBQ sauce & 1 with just some of the meat juices it was cooked in, for people who don’t care for BBQ & we set out many different sauces.

The meat that didn’t have BBQ sauce we later used for tacos & that was a huge hit also! Many creative ways to use the leftover meat – it would be great in fried rice, stir fries, etc…
