Being Excited about the Little Things
After feeling so deprived by all the foods I can’t have, I decided it is better to get excited about some new foods I found that I CAN have…or at least try… like parsnips… they didn’t test for them, but I can have many root vegetables, so I’m willing to try them. 🙂
And brag on my hubby a bit, he’s pretty great at encouraging me & helping me find alternatives. 🙂
So this week we went to Woodmans after a Doctor appointment & I got parsnips & several different types of potatoes & sweet potatoes (including some purple yams), rainbow carrots & JUMBO avocados (which are great in smoothies & guacamole & you can make pudding from them that’s pretty amazing) & purple cabbage.
And chocolate chips (Amazon affiliate links) with only 2 ingredients, which is awesome for when I want to have a treat. And, what I’m most excited to try, several different types of FLOURS! With being allergic to ALL nuts & grains, I miss flour a lot. I had tried some cassava chips recently that I did fine with (& they were delicious), so I was excited to find cassava flour. Also Grant found quinoa flour, which is better than I had hoped for. And we also found banana flour…interesting. They were all pretty reasonably priced, which I was even more excited about, so now I have a lot more options. I had ordered some red & black quinoa and some quinoa flakes (like oatmeal, but made from quinoa) from Azure last week that also came in this week. Yay!
It feels nice to be excited about the little things. And hopefully it will help me make some wiser choices so my body can heal faster. 🤦♀️

So I have made a recipe with parsnips .,. Once 😉But have never risked the avocado pudding or supposedly ice cream … The purple yams make cool soup …. impressed with the fries wrapped in goat cheese!
I made roasted veggies yesterday with potatoes, parsnips, sweet potatoes, carrots, onions, garlic, parsley & turmeric. It was so good!!
