Instant Pot Potatoes
Something we’ve been doing a lot lately is baked potatoes in the instant pot.
You can do white potatoes or sweet potatoes. I’ve even mixed both in the same pot with no problems.
It doesn’t even matter if they are all different sizes, or if you do 2 or a bunch! Amazing!
There are a lot of size/time reference charts online, but since I don’t often have potatoes that are all the same size, I normally set it for 30-35 minutes for sweet potatoes or 20-30 for white potatoes & let it natural release for 10 minutes (or longer, you can even leave them for hours to keep warm). The beauty of this process is that you can’t overcook them! If you’re not sure, set it for longer, it won’t hurt them!
No poking holes in potatoes, just scrub them & place them on the trivet in the pot.
As always, any time you use an instant pot, you must use at least 1 Cup of water. If you have the 8qt, add 1 1/2 water, then the trivet, then the potatoes. (Even though I do this ALL the time, I totally forgot to add the water last night! 🤦♀️ Which delayed dinner…thankfully we weren’t in a hurry.)
A couple weeks ago I did 20 small potatoes in my 8qt instant pot & it hardly took any time at all!
