Fried Rice

Fried rice always has a special place in my heart because I grew up eating it at my Grandparents house.

I started making it for my family years ago & every time I make it, I think of my Grandma. When she was alive, I would call her & say, “I’m making your fried rice!” & it would just be an excuse to talk. I miss her! ❤

I never followed an exact recipe, but finally wrote one out for my girls since they wanted it for their recipe book. I also included a copy if my Grandma’s recipe at the bottom of the page.

This obviously makes a huge batch as we are a large family & enjoy having leftovers. You can make smaller batches easily.

Prepare ahead of time by cooking the rice. This can even be done a day ahead.

Then cook the bacon & save the grease to cook the fried rice in.
Mix up the rice with the beaten eggs, chicken or whatever leftover meat you have, the cooked bacon, etc.
Next add the soy sauce
Then fry it up in a skillet in the bacon grease until it is the golden brown doneness you prefer. Some prefer it crispier – if you do, you can cook it longer.
