Cooking With Lizzy – Meringue cookies (GF)

        Meringues are DELICIOUS!!!!!!!!!!!!!!!!!! I love meringue cookies, they are fun and easy to make. And, they are Gluten Free! (GF) I especially like watching it go from liquid egg whites to a soft marshmallow type consistency. Well, let’s get started. In the above picture I am separating eggs. You CAN NOT let the yolk break into the whites. If you do, the meringues will not whip up and you will be stuck with a mixture of egg whites, cream of tarter, salt, and vanilla extract and no meringue. Bad, VERY BAD.

 

     Ingredients, without them, what do you have?

 

 It’s hard to see, it is more visible on the mixer, but this meringue is in the middle stage of fluffing where it is not liquid but not marshmallow fluff either. It is more like a whole ton of little air bubbles.

 

 

 

 Now THAT is what stiff peaks look like. You can see if they are soft peaks by pulling your whisk out of the mixture. It should have a peak that rolls down.

  This is how I fill my piping bag – you get a large cup and stick the tip down to the bottom. Then you flip the edge down over the lip.

 

  I painted the inside of my bag so that I could make a swirl pattern.

 

   Most of them I made just dots but some of them I made them into Rosettes………….. At least.. That’s what I tried to do

 

                                               Ingredients

  . 2 egg whites

  . 1/4 tsp cream of tarter (which is actually a powder not a cream)

  . 1/4 tsp vanilla extract

  . 1/4 tsp salt

  . 1/2 C sugar

 

 

                                            Directions

  . preheat oven to 250

  . separate egg whites and let sit till at room temp

  . add in cream of tarter, vanilla extract, and salt and mix at medium speed until soft peaks appear

  . gradually stir in sugar – 1 T at a time

  . pipe meringue onto a parchment paper lined cookie sheet or you can just use a spoon

  . bake in preheated oven for 35 minutes than turn of oven and do not open door.
Leave meringues in to dry in oven for an hour

                                                        ENJOY!!!!!!!
