Creative Ways to Make & Eat Eggs
Since our chickens are laying over a dozen eggs a day (which is awesome by the way), we are needing to find more ways to eat & use eggs.
I wasn’t a very good cook when we got married, so that is something that is very important to us, that we teach our kids to cook & have them working in the kitchen with us often.
A few new things we tried this week:
Hard boiling eggs in the oven – super simple, just place an egg in each muffin tin, bake in a preheated 325 degree oven for about 27 minutes – adjust accordingly if you want them more or less cooked, but 27 minutes produced perfectly creamy yellow eggs that were not too soft or too hard. Making “baked” eggs in a muffin tin – kind of like a fried egg. Grease the muffin tin, crack an egg into each muffin tin, sprinkle with salt (& pepper if you want) & bake at 350 for 17 minutes.
A crustless egg quiche which has become a new favorite. You can add whatever you want – I added cheese, spinach, peppers & onions (I buy a frozen bag at Woodmans that is great for this sort of thing), ham and some ground turkey (because it’s what we had on hand) & a cup of cooked quinoa. A lot of these ingredients I just had precooked in the freezer, so it was very simple to pull together. The basic recipe is:
10 eggs
1 1/2 C milk
2 C of whatever add-ins you want (I probably added about 4 C total with the shredded cheese & quinoa on top of the meat & veggies)
1/2 tsp salt
1/4 tsp pepper
Mix all together, pour into a greased 9×13 baking dish & bake at 375 for 45 minutes.
