Different Foods I’ve Been Making

I love quinoa & since I can’t have grains, I do eat it pretty often. I always cook it in chicken broth & a bit of olive oil.

Scrambled farm-fresh eggs with turkey bacon & scallions
Brown rice noodles with olive oil, salt, a little Manchego cheese (made from sheep’s milk… Costco stopped carrying the hard goat cheese I really liked so I’ve been using this instead). The noodles are topped with asparagus, zucchini, squash & artichoke hearts. One of my favorites!! Recently I was able to add rice in to my diet on occasion & it has been wonderful! 😍

Sauteed rainbow carrots, zucchini, & squash. I cooked them in olive oil with salt & some basalmic vinegar.
I made some zucchini noodles (zoodles) & topped them with the stir fried veggies. I also tried it with some spaghetti sauce, it wasn’t my favorite, but good to try something new.
