Freezing Aparagus

Did you know that you can freeze fresh asparagus? I didn’t until last week! (Well, I knew you could, but didn’t know how.)

We have more asparagus than we can use currently, so I wanted to share what I learned.

I prefer to cut & sort the asparagus by size. Makes it easier to freeze & serve later, & then I was able to cook it all in one pot, adding in the biggest pieces, then the medium & smallest, at 1 minute increments.
Prepare an ice bath for after
Put the asparagus in boiling water for 2-4 minutes. Start with the thickest, at 4 minutes, then down to just 2 minutes with the skinny stalks & I included the heads with the skinny pieces
After it has been in the boiling water for the appropriate amount of time, put it in the prepared ice bath.
After it has dried off, lay it out on a cookie sheet until it is at least semi-frozen, then you can put it in a freezer bag. This will prevent clumping & make it easier to pull out just as much as you’d like
