Goat Cheese Medallions

A friend made some goat cheese medallions for us last month & they were so tasty! I decided to try my hand at making them. 😊

Start with the rolled logs of soft goat cheese
Cut some into about 1/2 inch medallions – I used about half of the big 10.5 oz log (I don’t know why it looks pink in the picture, it must have been the lighting)

I am not sure how to get it to cut evenly without pieces breaking off… I’ll keep working on that.
I whisked up an egg & on the right is a mixture of millet flour, finely ground corn, black sesame seeds, pink salt & some onion powder.

Dip the medallions in the egg, then in the breading mixture, then put them in a hot skillet with about 1 Tbsp of avocado oil. Cook over med heat for about 2 minutes on the first side & maybe 1 minute on the 2nd side. You don’t want the cheese to start melting, but you are looking for that crispy, golden brown exterior.

The finished product (it looks sloppy & crowded because I dropped all the scraps in together…didn’t want anything to go to waste!) 😉

Serve immediately. They are not quite as good leftover, but passable. 😊
