Grandma B’s Pork Chop Recipe
Soon after Grant & I were married, my Mother-in-Law gave me a recipe box with some family recipes. Grandma B’s Pork Chops has been a favorite of our family, & it’s very simple!
I often buy huge pork loin roasts & just cut them into about 1″ pork chops, but you can also buy either bone in or boneless chops. We have used any & all.
Sear the pork chops on both sides & lay in a glass baking dish. They can be touching, but shouldn’t be stacked. Cut up an onion & sprinkle over the top. Sprinkle brown sugar over the tops (about 2 Tbsp per pan), squirt mustard (about 2 Tbsp per pan) & add ketchup to cover (maybe 1/4-1/2 C per pan) & 2 Tbsp of vinegar, then add a little bit of water, maybe 1/4 Cup per pan.
I know, real precise, right? 🙂
Bake at 350, uncovered, for 1 1/4 hours. They often turn out dry, but SO flavorful! You could try cooking them for less time, but with pork you don’t want to undercook it, so you would want to make sure it’s cooked through.
What you do is pile the onions on top of the pork than eat it. It’s no where near as dry that way
Genius! Next time we can add more onions. 🙂
