Ham, Egg & Cheese Cups
Since our chickens are laying well again, (which has been on & off this year!!), we are again looking for ways to use eggs & discovered these yummy treats.
Then add a piece of cheese or some shredded cheese. Then an egg in each cup.
You can make it without the cheese, we have tried it both ways, but with cheese is the preference for us.
Bake at 400 degrees F for 12-15 minutes depending on if you want the eggs to be runny or fully cooked. We have been doing it for 14 minutes & enjoyed them… they are fully cooked & not runny at all, but not overcooked either.
Don’t forget that they continue cooking after you pull them out of the oven!
Looks yummy! I saw a similar way in Taste of Home magazine where you scramble the eggs before you put some in the muffin cups, then add diced ham and cheese on top. Haven’t tried it yet.
That sounds good!
