Ham, Egg & Cheese Cups

Since our chickens are laying well again, (which has been on & off this year!!), we are again looking for ways to use eggs & discovered these yummy treats.

Start by putting 1 piece of ham lunchmeat in each muffin tin spot…I used muffin liners because muffin tins are SO hard to wash. You can grease them instead if you’d rather.

Then add a piece of cheese or some shredded cheese. Then an egg in each cup.

You can make it without the cheese, we have tried it both ways, but with cheese is the preference for us.

Once you have the muffin tin filled with ham, cheese & eggs in each cup, sprinkle with salt (& pepper if you want)

Bake at 400 degrees F for 12-15 minutes depending on if you want the eggs to be runny or fully cooked. We have been doing it for 14 minutes & enjoyed them… they are fully cooked & not runny at all, but not overcooked either.

Don’t forget that they continue cooking after you pull them out of the oven!

The finished product. These 12 were gone with 3 people eating them for lunch! 😯 They were a hit!
