Meatballs Recipe DF, GF

I originally got this recipe from a friend & tweaked it. (I’m not terribly good at following recipes exactly…haha. I usually rewrite it to fit our likes/needs, size, etc.)

A standard sized DF/GF Meatball recipe:

*2 lbs ground beef (you can use 1 lb of ground pork if you like the mixture)

*1 C oatmeal

*1/3 C dried parsley flakes (we left out of part of it for a daughter who can’t have parsley. You can also substitute basil if you prefer the taste, but I would add less since it’s a lot more potent.)

*2 eggs

*2 Tbsp soy sauce (can substitute coconut aminos to make it soy free. We left it out due to soy allergies & it was fine without, although I do think it adds some flavor)

*1 tsp salt

*1 tsp garlic powder

*1/3 C ketchup

*2 Tbsp minced onion (you can use finely diced fresh onion, your preference. We used real onions – about 1/2 – 2/3 of an onion per batch)

Mix all ingredients & roll into balls.

We used a cookie/ice cream scoop to make them uniform.

Cook at 400 for 20-30 minutes, depending on how big you made them, how crowded the pan is, etc. It may take longer, depending on many factors. Cut one open to make sure it’s cooked through.

You can serve with a basalmic reduction (delicious!), barbecue sauce, Serve over rice or egg noodles if you’re not GF.

This is one of my family’s favorite meals. Even serving it with Mexican black beans & jasmine rice, we polished off 6 lbs in 2 days (we happily enjoy any leftovers for lunches). 😊
