Recipes – Hamburger Casserole & Italian Beef
I was asked to share a few recipes, so I thought this was the best way. These were both given to us after we had a baby many years ago & became favorites! They are both quick & easy! 😊
Hamburger Casserole

Serves 6-8
1 1/2 lb hamburger
1 C chopped onion
1 C chopped celery
Brown above in skillet & drain off fat.
1 can cream of chicken soup
1 can cream of mushroom soup
1/4 C soy sauce
1 C cooked rice
Mix together and add to hamburger.
Bake at 350 for 1 hour.
Italian Beef – slow cooker recipe (**instant pot instructions listed below**)
3 C water
3 beef bouillon cubes
1 tsp salt
1 tsp pepper (optional, we don’t add it because most of the family doesn’t care for spicy)
1 tsp oregano
1 tsp basil
1 tsp onion salt
1 tsp dried parsley
1 tsp garlic powder
1 (.7 oz) pkg Italian style dressing mix (this is optional – If I don’t have any on hand, I’ll just double the spices listed above & I haven’t noticed a difference)
1 5-lb rump roast (I have also used chuck roast, either work fine)
Cover & cook on low for 10-12 hours or High for 4-5 hours. Shred meat with a fork, then serve as desired (we like it on Kaiser or Deli rolls, topped with giardiniera for those who care for that, and mozzarella cheese.)
**Can do in the instant pot at high pressure for 60 minutes instead, or longer if frozen (about 90 min)**
