Pizza is definitely the food I miss the most, and cheese.Quinoa! I have been having it in stir fry, with salad, in quiche….a good source of carbs & protein. A crustless quiche made with spinach, turkey bacon, quinoa & goat cheeseMy first time making a cauliflower crust! It held up pretty well & didn’t even taste like cauliflower (not that I would have minded)Cauliflower crust Pizza – guacamole on the left half, pizza sauce on the right. Goat cheese, a bit of broccoli & artichoke hearts.
And of course my favorite, guacamole!
My favorite, favorite food these days….hard to find things to pair it with, but still delicious!!!One of the most delicious salads I’ve had in along time…yum! Lettuce, tri-color quinoa (cooked with onion, garlic & chicken broth), guacamole & olives
Rainbow carrots…yum! Regular carrots are fine, but rainbow carrots are delicious & add extra, different nutrients. 🙂 (I did research on it this past week, wondering if it was indeed worth paying extra for the rainbow carrots & apparently it is.)
