Stir Fry

I have been experimenting with different veggies & stir fry options. This is a new favorite of mine! I like to eat it with some quinoa. You could also add some chicken.

-1 sweet onion

-1 leek

-1 daikon radish

-2 small summer squash

-a few artichoke hearts

Dice up & saute a sweet onion in some olive oil

Cut off the dark green end (save it for soup or a broth). Thinly slice up the leek into rings.

Soak the leek rings in a bowl of cold water as a lot of dirt can be in between the layers. (You can see I had a special helper at this step…a good way to keep little ones busy) 😀

Some artichoke hearts…I buy them in the glass jars because the large fresh artichokes always seem intimidating & a lot of work, don’t last as long, etc. Maybe someday. 😉
Throw everything in the skillet after the onions have softened & cook for a few minutes until the veggies are at your desired level of tenderness. I usually add the squash last because it doesn’t take very long to cook.

Add salt to taste.

The finished stir fry. Mmm.

You could also add garlic, or a basalmic vinegar to change it up a bit.
