Tuna Cakes Recipe GF DF
Tuna Cakes have become one of our favorite easy meals, ideal for lunches or even dinner, paired with some chips and veggies. This recipe makes a pretty big batch, enough for our large family. Feel free to half or quarter it if you are feeding less people. π
Ingredients:
*9 cans of tuna packed in water, drained
*5 stalks of celery (wash & put in food processor)
*1 large green pepper (washed & put in food processor)
*2 small yellow onions (finely diced in food processor)
*2 Tbsp dried dill or parsley (2 of our kids can’t eat parsley, so we either leave it out or use dill)
*3/4 C gluten free flour (can use rice flour, almond flour, a mixed blend, or whatever GF flour you have. Just don’t use coconut flour unless you adjust the proportions as you need much less with it)
*1 tsp salt
*6 eggs
Mix everything together. Heat a nonstick or electric skillet, add a bit of oil so they don’t stick & when the pan is hot, drop 1/3 Cup servings of the mix, flattening out carefully with a spatula.
Cook for about 5 minutes, or until the patties look like they are drying out on top. They should be nicely browned on the bottom. Flip, pressing down to make sure it cooks evenly, & cook for another 5 minutes.
Squeeze a lemon wedge over each patty right before eating. We love eating them with mayo, pickled onions, banana peppers, pickled radishes, etc. They are also great on a piece of toast if you wanted to use some GF bread.
