Our Favorite Chili Recipe (With Large Crowd Options)

Chili Recipe – 60 servings for a 22 QT roaster or other large stockpot:

*6 lbs ground beef, browned & drained

*3 lbs dried kidney beans – soaked & cooked, or cooked in an instant pot. (You don’t need to cook them 100% if you are going to simmer the chili all day.)

*2/3 C chili powder (we found this amount to be very sweet & mild – which the kids LOVED. You can add 1 full C if you like more of a kick)

*2/3 C onion powder

*1/3 C garlic powder

*3 small 6-oz cans of tomato paste

*4 28-oz cans of crushed/diced tomatoes based on your preference. Or just use puree if you don’t want the chunks

*1/3 C & 2 Tbsp salt

I didn’t measure the amount of water, I just basically added enough water to rinse out each of the tomato cans. You can always add more to get it to the consistency you want. We like our chili thicker.

Our 22 qt roaster with a huge pot of chili. I put it together in an hour (including cooking the dry beans…instant pot for the win since I had forgotten to soak them!) before rushing off to work & let it simmer all day (the girls did a great job of stirring it every half hour.)

A “NORMAL” SIZED CHILI RECIPE

*1-2 lbs ground beef, browned & drained

*1 lb dry kidney beans, cooked

2-4 Tbsp chili powder – based on how much you like

2 Tbsp each onion & garlic powder

1 6-oz can tomato paste

1 28-oz can tomatoes

1-2 Tbsp salt (to taste, you can always add more!)

Follow instructions as above!
