Almond Milk Ice Cream

With dealing with so many food sensitivities, it’s been an adjustment for our family.

Last week we had a birthday celebration with the family for the 3 recent birthdays.

As I was thinking about what would be a special treat that we could possibly pull off with so many different sensitivities & I was grateful to have a do-able solution pop into my head…what about making our own ice cream? We have an electric ice cream maker that we love, so all I needed was the right ingredients. (We already had some leftover cake from the day before & some “regular” ice cream in the freezer).

Thankfully, we had enough almond milk in the fridge & all we added to it was sucanut (a less refined sugar option that adds some flavor also, since we couldn’t add any vanilla). (We used the same recipe our ice cream maker called for as far as milk/sugar measurements)

All 3 of the older girls could eat it & better yet, enjoyed it! What a blessing!

I’m thankful for ideas & ways to make little treats like this!

*(As a fun note, we bought this ice cream maker with Christmas money from my Grandparents probably in 2013. I think of them often when we use it. 🥰❤)*
