Cooking With Lizzy – “Lemon Brownies”

          Hi! As you can see. This is Lizzy (=  and hopefully I will be doing one of these posts every week. So if anyone has anything they might want to learn how to do, or a recipe that you may or may not have seen on the “2 week meal plan” ( ;  please let me know in the comments and I will try to do it in the near future.

 

In this picture I am sifting flour. you don’t have to sift your flour mixture but I feel that it makes the batter a lot smoother

MMMMMMMM Lemon Brownies

Here I am zesting  a lemon. there are many ways to zest a lemon you can buy a special tool for it or you can use the side of a cheese shredder like I do. You can also just use a knife but no matter what tool you use you have to be careful not to get the white part. It is very bitter.

 

                                      LEMON BROWNIE RECIPE

 

            Brownie ingredients                       Lemon glaze ingredients

   . 1 C unsalted butter softened                    . 1 1/2 powdered sugar

   . 1 1/2 C sugar                                             . 3 T fresh lemon juice

   . 2 T lemon zest                                           . 4 T lemon zest

   . 4 large eggs

   . 2 T fresh lemon juice

   . 1 1/2 C all-purpose flour

   . 1 tsp baking powder

 

    *Note* if you do not have a whole ton of zest don’t feel discouraged you can use a substitute. (For some of it anyway) you can use 2 T of lemon juice for each tsp of lemon zest IN THE BROWNIES DO NOT I repeat DO NOT use this in the glaze. If you do it does not set up, it just soaks into the brownie. which isn’t a bad thing but it doesn’t taste as good.

                   Directions

  1. Preheat oven to 350 degrees and grease a 9 by 13 baking pan

 

  2. In a small bowl, whisk together the flour and baking powder

 

  3. Using a standing mixer, beat together the butter, sugar, lemon                     juice, and lemon zest until light and fluffy

 

  4. Beat in eggs, one at a time

 

  5. Gradually beat in the dry ingredients until combined

 

  6. Pour batter into baking pan and bake for 25-28 or until a                             toothpick comes out with moist crumbs. make sure to not over bake

 

   7. Allow to completely cool on the counter

 

   8. Using a large mixing bowl, whisk together the powdered sugar,                    lemon juice, and lemon zest until combined

 

    9. Pour glaze over the lemon bars and spread evenly

 

    10. Allow to harden a few hours before enjoying.   YUMMMMMYYY!!!!
