“Zoodles” with Sauteed Veggies

Have you ever made zucchini noodles, or “zoodles”? I have bought them frozen before, but this was my first time making my own. I have a spiralizer that doesn’t get used often enough (I really like sweet potato noodles, but always forget to make them!) & I used it to make these zoodles. The spiralizer leaves the core & ends, so I diced them up & added it to my vegetable medley. It was good.

What are some ways you like to use zucchini noodles? I tried an Asian recipe that looked good, but it did not settle well unfortunately (although Lizzy enjoyed it!) I would love to hear some other options. Maybe I’ll try it with just garlic, salt & olive oil next time. I had made a cauliflower “alfredo” sauce one time & thought that would be good on zoodles.
